A WAREWASHING machine; the compartments of sinks, basins, or other receptacles used for washing and rinsing EQUIPMENT, UTENSILS, or raw FOODS, or laundering wiping cloths; and drainboards or other EQUIPMENT used to substitute for drainboards shall be cleaned before use, throughout the day at a frequency necessary to prevent recontamination of EQUIPMENT and UTENSILS and to ensure that the EQUIPMENT performs its intended function and if used, at least every 24 hours.

Repair the leak. 5-202.13 Backflow Prevention, Air Gap (P) The drain pipes for the 3 comp and prep sink were sitting near the floor at less than 1 inch. An air gap between the water supply inlet and the flood level rim of the PLUMBING FIXTURE, EQUIPMENT, or NONFOOD EQUIPMENT shall be at least twice the diameter of the water supply inlet and may not be less than 1 inch. Raise both drain pipes so that they are at least an inch above the flood rim of the floor drain. A verification visit will be performed for this violation within 3 days.

Keep the dumpster and other outside waste handling containers for refuse, recyclables, and returnables covered with tight-fitting lids or doors. Keep lids closed on the dumpster. 5-501.115 Maintaining Refuse Areas and Enclosures (C) Both dumpsters were placed on the ground in the parking area. Empty boxes, an old filing cabinet and other debris was observed in the unused enclosure. A storage area and enclosure for refuse, recyclable, or returnables shall be maintained free of unnecessary items, and clean. Remove the unused items and clean the enclosure.

There was a hole in the metal wall of the mop sink. Floors, walls, and ceilings including the attachments such as soap and towel dispensers; light fixtures; and heat/ac vents shall be maintained in good repair. Repair.
