3-501.19 Time as a Public Health Control - Pf - REPEAT- Facility is using time for the TCS foods for their pizzas and they were observed not time stamped and the facility didnt have the written documentation or TPHC. The facility also does not have their updated TPHC form to include the items added during the previous inspection. When using time as the public health control there must be written documentation of when the food was taken out of temperature control. CDI- Discussed different potential methods for recording the time each new container begins time control with PIC. DEmailed the facility the updated TPHC form, please print this out and keep in the facility for future inspections. I will verify this has been fixed in 10 days. |
