3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food, Hot and Cold Holding (P) REPEAT-Observed several containers (overstacked) of shredded lettuce at temperatures ranging from 49F-51F (on the top) in the make line and walk-in cooler, sliced tomatoes (overstacked) in the make line and walk-in cooler at 44F-47F, sliced bell peppers at 44F, Turkey breast at 44F, and tuna salad at 48F in the walk-in cooler. The ambient temperature inside the walk-in cooler was observed at 53.6F (beginning) and 44F (end of inspection). Maintain TCS foods in cold holding at 41F or less.-CDI- PIC stated that they had been in and out of the cooler doing prep this morning. EHS suggested leaving the door closed to assure cooler was working properly, take food off of the make line and blast chill it in the freezer, and separate foods into less shallow pans. Do not overstack products on the make line. -Verification visit required in 3 days (June 30, 2022). |
