General CommentsGreat improvements were noted compared to the previous inspection. Excellent handwashing procedures were observed. Most repairs were maded. Proper food storage practices were being followed, and TPHC was properly filled out!! Thermometer calibrated checked. EHS cleaned and sanitized thermometer and probe at start and throughout the inspection

However, observed tempura chicken dated for 3/17 in the reachin. Also noted, two packs, one opened of tofu with a manufacture dated on Feb. 2026. PIC stated that the tofu came on the Friday's delivery and is awaiting for credit. Refrigerated, READY-TO-EAT, TIME/TEMPERATURE CONTROL FOR SAFETY FOOD prepared and held in a FOOD ESTABLISHMENT as well as READY-TO-EAT TIME/TEMPERATURE CONTROL FOR SAFETY FOOD prepared and PACKAGED by a FOOD PROCESSING PLANT that has been opened and held for more than 24 hours shall be clearly marked to indicate the date or day by which the FOOD shall be consumed on the PREMISES, sold, or discarded when held at a temperature of 41F or less for a maximum of 7 days and may not exceed the manufacturer’s use-by date. CDI, advised the PIC to relocated the tofu and put a sticker stating "Do Not Use" until credit is picked up. The tempura chicken was voluntarily discarded.
41 0 Wiping cloths: properly used & stored No No No 3-304.14 Wiping Cloths, Use Limitations- C - Observed one wet wiping cloths stored on prep surfaces. Also noted, the sanitizer Bucket being stored on the floor near the back hand sink.Hold in use wiping cloths in sanitizing solution between uses. Keep all wet wiping cloth stored inside the bucket and off the ground.
47 1 Equipment, food & non-food contact surfaces approved, cleanable, properly designed, constructed & used No Yes No 4-501.11 Good Repair and Proper Adjustment - Equipment (C) REPEAT Torn gasket on the walkin freezer door and the heating element on the door is no longer properly working. Ice had began to form however, PIC was able to provide a pending work order. Observed one cracked container that was in use at the makeline. Equipment shall be maintained in good repair. Repair listed items. PIC provided documentation stating repair man had been out to replace gasket but it was the wrong size and he would have to place a new order. 4-205.10 Food Equipment, Certification and Classification- REPEAT Major improvement on replacing most of the non-food grade containers however one containers was found used to stored food. Except for toasters, mixers, microwave ovens, water heaters, and hoods, FOOD EQUIPMENT shall be used in accordance with the manufacturer’s intended use and certified or classified for sanitation by an American National Standards Institute (ANSI)-accredited certification program. If the EQUIPMENT is not certified or classified for sanitation, the EQUIPMENT shall meet Parts 4-1 and 4-2 of the Food Code as amended by this Rule.
