Found pico de galo in the 2-reach-in cooler at the makeline holding at 49F. Maintained all cold TCS food at 41F or below.
CDI, employee stated that the pico de galo was out for a period of time to make an order. The pico de galo was placed in the reach-in freezer to rapidly cool. |

4-602.13 Nonfood Contact Surfaces- C - REPEAT
Several gaskets throughout the facility were observed with black buildup. Although the drawers beneath the flat top are not used for food storage, the drawers still require cleaning. Also noted, one cambro white and black growth in the inside. Non-food contact surfaces of equipment shall be cleaned at frequency to prevent accumulation of soil residue. Clean the gasket and replaced the stained ones. |
