CDI- The unit was placed OUT OF ORDER and items were moved into a working cooler unit as they were still within adequate time perameters. |

3-501.15 Cooling Methods (Pf)- REPEAT- In the reachin cooler, container of hamburger that was recently prepped was tightly covered as well as cheese that was cooling down after recently being used. In the indoor walkin cooler there were also multiple containers that had been cooling with lids on and stacked with other foods. Cooling shall be accomplished by using one or more of the following methods based on the type of food being cooled:
(1) Placing the FOOD in shallow pans;
(2) Separating the FOOD into smaller or thinner portions;
(3) Using rapid cooling EQUIPMENT;
(4) Stirring the FOOD in a container placed in an ice water bath;
(5) Using containers that facilitate heat transfer;
(6) Adding ice as an ingredient.
CDI - PIC removed covers to cooling items in the walk in coolers to allow for heat exchange and vented items in low reach-in. |

4-501.12 Cutting Surfaces (C)- Cutting board upstairs is heavily stained and scored and in need of replacement. Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and SANITIZED, or discarded if they are not capable of being resurfaced. |
