4-204.112 Temperature Measuring Devices - Functionality (C) - A few of the ambient air thermometers in the refrigeration units were reading temperatures that were more than 3 degrees off calibration. Upright two door unit had a thermometer that said it was 20F when it was 35F. A low reach in had a thermometer that read 29F and items were 39F.
Check the ambient air thermometers of each unit and replace the ones that are more than 3F out of temperature. |

REPEAT - 3-304.14 Wiping Cloths, Use Limitations (C) - Observed a large bucket with wiping cloths in sanitizer that was below the required parts per million. Quaternary ammonia sanitizer must be between 200 and 400ppm.
Make sure to use test strips to test the sanitizers when they are made and through out the day as they will loose their strength.
CDI - buckets was changed out. |

4-501.11 Good Repair and Proper Adjustment - Equipment (C) - Upright two door unit was leaking water under Metro 7. Have unit serviced so there is no water leaking on the floor from the refrigeration unit.
Low reach in under the counter in the coffee area has a loose door. Tighten the hinge so the door properly closes. |

4-302.14 Sanitizing Solutions, Testing Devices (Pf) - Could not locate the Quat Test strips. Facility was keeping them in a tray attached to the ice machine. The tray fell off and they could not locate the test strips.
Purchase new test strips or find the ones you had and make sure they are not expired.

REPEAT X3 - 6-201.11 Floors, Walls and Ceilings - Cleanability (C) - Flooring in the back under the three comp sink was rough concrete and needs to be fixed. Add floor tiles so that the food can be properly cleaned.
6-501.12 Cleaning, Frequency and Restrictions (C) - Observed some debris under the cabinetry. Looked to be spilled coffee and some coffee beans.
Observed debris under the three comp sink around the drain. Looked like spilled milk and round tapioca bubbles. Clean the floor and repair it so it is smooth and easily cleanable. |
