4-501.114 Maintain sanitizer at correct concentrations when being used to sanitize. P Observed sanitizer being used for spray bottles and 3 bay sink, when made according to manufacturer instructions, was too strong, reading above 500 PPM. CDI- EHS and PIC made fresh sanitizer and adjusted strength to meet the rules and criteria for sanitization using chemicals; currently, sanitizer is not used on food contact surfaces when dish machine is operating correctly. |

6-501.11 Repairing - Premises, Structures, Attachments, and Fixtures - Methods (C) Observed baseboards separating from wall in both walk-ins, tile missing under hand sink by back door, cracked wall tile on front line by hand sink and hand sinks need to be recalked to wall. Physical facilities shall be maintained in good repair.
6-501.114 Maintaining Premises, Unnecessary Items and Litter (C) Three 4-door units, one 2-door unit and one warmer are not currently working. Units are being used as storage.
