3-501.18 Ready-To-Eat Time / Temperature Control for Safety Food, Disposition (P)
- EHS observed multiple trays on a speed rack with date labels of 3/9/2026 (cooked rice), 3/26/2026 (beef bites) and 2/18/2026 (cooked dumplings) in the freezer. No indication of when items were placed in the freezer was observed. Per PIC beef bites were placed in freezer on 3/26/2026 pausing the 7 day clock.
- Discard the food requiring date labels once the time/temperature window has expired, if it is not labeled, or if the label is incorrect.
- CDI items that were out of date and were unknown as to when they were placed in the freezer were disposed off. Beef bites were labeled to indicate how many days were left on the seven day limit once they were removed from the freezer. |
