- EHS observed a can of pinto beans in the walk-in cooler that had a disposition date of 4/21/2026. Inspection took place on 4/28/2026.
- Discard the food requiring date labels once the time/temperature window has expired, if it is not labeled, or if the label is incorrect.
- CDI PIC voluntarily disposed of the pinto beans.
3-501.17 Ready-To-Eat Time / Temperature Control for Safety Food, Date Marking (Pf)
- EHS observed two bags of cut leafy greens that had been opened on 4/27/2026 and not date labeled.
- Date mark all ready to eat TCS foods prepared onsite and held for more than 24 hours.
- CDI PIC labeled the cut leafy green 4/27/2026. |

- EHS observed an irreversible registering temperature indicator on site. However, it was not functioning at the time of inspection.
- In hot water mechanical warewashing operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the utensil surface temperature.
- CDI PIC replaced the battery on the irreversible registering temperature indicator and it functioned normally. |

- EHS observed broken floor tiles at walk-in cooler door threshold, threshold of the PICs office, damaged wall tiles above the 2 compartment dish sink, and cracked wall tiles to the left of the dish machine. Peeling paint was also observed on the ceiling of the dry storage area.
- Physical facilities shall be maintained in good repair.

- Observed the ceiling above prep table, 2 compartment sink, and prep sink to have build-up.
- Physical facilities shall be cleaned as often as necessary to keep them clean. |
