General Comments

-Food thermometer’s accuracy (PIC and EHS) was checked in ice bath to 32F; -Hot Temp Dishwasher: kitchen has both, thermometer and stickers; -All food items were ready-to-eat (RTE) and cooked for immediate service or Time Control. Leftovers are discarded; -RTE chicken and vegetables were frozen in walk-in freezer; -3 Comp Sink doesn’t have automatic dispenser, staff prepared manually. They have instructions in how to prepare, all buckets were prepared manually and it was 200ppm for QUAT Sanitizer.
