4-602.11 Equipment Food-Contact Surfaces and Utensils - Frequency (P). Observed a scraper for the CFA grill that is used to remove grilled nuggets and breasts off of the grill to move to hot holding. Inspector asked how often this utensil is changed out or sanitized and workers responded with “daily.” In use utensils that are in contact with TCS foods must be changed out every 4 hours or as needed to prevent the growth of bacteria. The utensil was taken back to the dish area to be washed rinsed and sanitized as the corrective action. |
