3-502.12 Reduced Oxygen Packaging, Criteria (Pf) PIC ROPs meats and cooks using a soup vide process. A food establishment that packages food using a cook-chill or sous vide process shall implement a Haccp plan, hold the item in a refrigeration unit that monitors time and temperatures, maintain records, implement written procedures, and hold records for at least six months. Inspector will provide required paperwork via email for PIC to complete and return by 7/3. |
