Manager was made aware that the hand sink is used for handwashing only and sifters were relocated during inspection CDI 6-301.14 Handwashing Signage (C) A sign or poster that notifies FOOD EMPLOYEES to wash their hands shall be provided at all HANDWASHING SINKS used by FOOD EMPLOYEES and shall be clearly visible to FOOD EMPLOYEES. Observed ice machine scoop being stored against the outside of the ice machine. Manager wash scoop and relocated scoop inside of ice machine with the hande out of the ice. Noted cleaned plates stored with food debris. CDI plates were removed and placed at the dishwasher to be cleaned properly. Clean pots and pans were observed being stored against wall. Pots and pans were washed and relocated during inspection (CDI).

Noted Cheese at 45F, pico at 47F, lettuce at 49F, ad beef balls at 52F in the prep cooler closest to the dish washing area. noted cheese at 48F and tomatoes at 45F in the prep unit closest to the ice machine. Manager relocated food items to WIF to be rapidly cooled. (CDI) Need to verify that all units have been repaired.

Water boots were observed being stored beside clean dishes. Boots were relocated during inspection (CDI)

Rusted shelving was observed throughout and shall be repaired/replaced. 4-501.12 Cutting Surfaces (C) Cutting boards (specifically green and red) were observed heavily worn and shall be replaced 4-501.11 Good Repair and Proper Adjustment - Equipment (C) A) EQUIPMENT shall be maintained in a state of repair and condition that meets the requirements Prep coolers closet to dish area and ice machine was observed above 41F. Food items were removed during Inspection. manager stated maintenance has been notified. EHS will verify unit is working properly.

Outside of dish washer was observed with debris and shall be cleaned. Large food containers throughout were observed sticky and shall be cleaned. Hood suppression was observed with grease build up and shall be cleaned. Equipment throughout needs additional cleaning

Vents throughout were observed with dust and shall be cleaned 6-201.17 Walls and Ceilings, Attachments (C) floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are SMOOTH and EASILY CLEANABLE. vents throughout were observed with rust and shall be replaced/repaired.
