Food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from ready-to-eat foods. The salmon was relocated below the cooked chicken to correct the violation. |

6-501.11 Repairing-Premises, Structures, Attachments, and Fixtures-Methods - C -- The toilet paper dispenser in the first stall of the employee women's restroom needs replacement. Also, the grouting was heavily eroded on the floor of the mop sink/can wash. Physical facilities shall be maintained in good repair.
6-501.16 Drying Mops - C -- Observed a mop not hung up to air-dry at the can wash due to damaged mop hangers. After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. Install proper mop hangers.
6-501.12 Cleaning, Frequency and Restrictions - C -- Clean floors and walls in the walk-in cooler and the floors in the walk-in freezers. Physical facilities shall be cleaned as often as necessary to keep them clean. |
