3-501.19 Time as a Public Health Control - Pf -- Observed side salads on the prep line holding using time as a public health control (TPHC) without a time label (other food on white board labeled and PIC stated they were placed out at the same time). Food using TPHC shall be labeled as written in the approved procedures. Since the salads were recently prepared and they knew the time, they were properly labeled with the correct discard time to correct the violation. REPEAT 0 PTS due to improvement since last inspection. |
