3-501.19 Time as a Public Health Control - Pf -- (0 POINTS): Observed salads prepared this morning on the service line and reach-in cooler holding using time as a public health control (TPHC) without a time label. Food using TPHC shall be labeled as written in the approved procedures. Since the time the foods removed from refrigeration was known (9:00 AM), they were properly labeled with the correct discard time to correct the violation. The manager has stated in the past that lunch service ends at 12, so they will know for sure that the wraps will be discarded before the 4-hour mark of 1:00 PM. |
