3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food, Hot and Cold Holding (P): TCS ready-to-eat foods must be held at 41 F or below. Multiple containers of coleslaw were found at 69-70°F and had only been out for 20 minutes. CDI-The PIC added ice around the small container of coleslaw to bring it to 41 F or below. The large container was voluntarily discarded by the PIC. |
