PIC was asked to properly date the ham, CDI. 3-501.18 - Ready-to-Eat, Potentially Hazardous Food (Time/Temperature Control for Safety Food), Disposition: Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. P *** Observed Cache dated for 3/28/2026 in the walk in cooler. Spoke with PIC about the item being past the date marking window and was expired. PIC immediately discarded the Cache, CDI.

Prep sink is cracked where drain board attaches to sink. The 2 door glass reach in cooler has multiple metal containers collecting water to prevent food items from being dripped on. 4-501.11 - Good Repair and Proper Adjustment: Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted. *** Make top reach in door gasket seals are heavily damaged and the left door of the 2 door glass reach in cooler has a torn gasket near handle.

One light fixture above the second handwashing sink is not operating. Multiple wall tiles being hind the cook line are coming loose or missing. There is a hole in the men’s and women’s restroom in the toilet areas. Hole in wall of dry storage. Light fixtures in both men’s and women’s restrooms are not operational.
