4-501.11 - Good Repair and Proper Adjustment: Equipment shall be maintained in good repair. *Dish machine and hot holding cabinet are not working and need to be repaired or removed if not going to be used. Ice scoop holder is cracked and needs to be repaired or replaced. Ice divider has popped loose in ice machine and needs to be reattached. Top drawer of cabinet near air drying shelf has sealant missing and is catching crumbs, this needs to be resealed to prevent buildup. |
