4-901.11 Equipment and Utensils, Air-Drying Required (C): After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining. Observed wet-stacking of a couple pans on storage rack near 3-comp sink. PIC notified and advised on proper drying methods. Pans were re-washed, rinsed and sanitized, and stacked properly to dry during inspection. CDI. |
