PIC said they use the bottom convection oven to hot hold food while they wait for the new hot holding cabinets to arrive. A employee stated she thought the top and bottom were still being used to cook, and forgot the bottom one was set to hot holding. The rice had not been cooked yet. Plant food must be cooked to 135 degrees F or higher before moving it into hot holding equipment. CDI: PIC moved the rice to the top oven to cook thoroughly before placing it back into hot holding equipment.
