4-601.11(A) Equipment food contact surfaces and utensils shall be clean to sight and touch. -Pf.
Observed a couple of plates with food debris on them. CDI - Plates were removed to be cleaned.
General Comment: EHS observed many plates are stained. EHS recommends replacing.

4-501.114 Maintain sanitizer at correct concentrations when being used to sanitize. -P
Observed sanitizer at dish machine reading at less than 50 ppm chlorine. CDI - Sanitizer dispensing at dishmachine was adjusted and sanitizer reached 50 ppm chlorine.
