Discussed with PIC how thawing needed to be completed under running water and the water shall be 70 degrees. In this case, the water was the correct temperature, it was just not submerged under running water. CDI: octopus was relocated back under running water at the correct temperature.
47 0 Equipment, food & non-food contact surfaces approved, cleanable, properly designed, constructed & used No No No 4-205.10 Food Equipment, Certification and Classification (C) RIC unit specifically designed to hold prepackaged and bottled items only being used for raw meat. REHS discussed this with PIC. PIC stated that all items for bar drinks (mixes, juices, etc) will be stored here in the future. 4-101.19/4-202.16 Non FOOD-CONTACT SURFACES of EQUIPMENT that are exposed to splash, spillage, or other FOOD soiling or that require frequent cleaning shall be constructed of a CORROSION-RESISTANT, nonabsorbent, and SMOOTH material. NonFOOD-CONTACT SURFACES shall be free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance. The plastic coating is still present on the RIF unit in the hall. The coating is ripping where particles, dust, etc. can be caught inside.
