General Commentsrecommend placing items in stainless steel containers when using ice to keep cold, this will facilitate better heat exchange and keep the product colder for longer instead of using plastic ---Observed multiple items from breakfast being left at room temp to cool before placing in the walk-in to cool, these items were above 135 degrees F during the inspection and had not gotten into cooling from 135-41 degrees F - This shall occur within 6 hours total, with the first 2 hours getting the food from 135-70 degrees F Currently on one kitchen manager that is a Certified Food Protection Manager - 210 days from date of permit to have onsite at all times of operation before points are assessed if no one is on shift during the inspection

The 3-bay sink has only one faucet, the fish was in water but water was not constantly running on the fish, it was on the red meat instead - CDI, red meat was placed into the walk-in cooler to bring back down to 41 degrees F, the water was placed on the fish for continued thawing - water must be constantly running at 70 degrees F or less when thawing using water
