4-201.11 Equipment and Utensils - Durability and Strength (C) Observed food items being stored in containers that use to hold other food items such as slaw in old ketchup container and BBQ sauce in tea container. Containers used for food storage need to be constructed in a manner to withstand wash rinsing and sanitizing. Containers that commercial food items come in are not made to be re used and stand up to the wash, rinse and sanitized process over time; they will start to degrade. Switch to food graded containers that are made for multiple uses. Educated owners on the issue. |
