(Pf) Observed slaw in 1-door reach in cooler without a date mark. PIC states it was made the previous morning. However, the slaw in the prep top cooler was properly labeled. CDI by PIC adding a label.
41 0 Wiping cloths: properly used & stored No No No 3-304.14 - Wiping Cloths, Use Limitation: Hold in-use wiping cloths in sanitizer between uses. Sanitizer bucket was less that 200ppm when measured with wet wiping cloth. PIC hot water was used when mixing QAC and that the truck was wiped down upon arrival. REHS suggests using room/cold water when mixing and refreshing after heavy use.
