4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration and Hardness (P) Chemical sanitizer shall be between 50-100 ppm for chlorine in mechanical warewash machine. Observed machine reading 0ppm initially, PIC was able to change out sanitizer and prime machine to get it reading 100ppm during inspection. Dining utensils were re-sanitized during inspection in 3 comp and subsequently in mechanical warewash machine. |
