3-501.17 Ready-To-Eat Time / Temperature Control for Safety Food, Date Marking (Pf) Time/Temp control foods shall be date marked to relflect a preparation date and/or a discard date. For example if sliced tomatoes are prepared and going to be used the net day they need a date mark. Observed cooked rice, cut tomatoes, and cooked and cooled beef with no date mark. PIC added preparation date to product of 9/23 to be corrected during inspection. |
