General CommentsAll units were working properly during inspection. I spoke in depth with PIC about cooling food properly and turning on all refrigeration on the mobile unit before loading the food for an event. I also spoke with him about leaving food out of refrigeration in between commissary storage to truck storage.

Store TCS foods at 41°F or below when cold holding. The foods were voluntarily discarded to correct the violation. I spoke with the PIC turning all units in MFU on and cooling completely before loaded food as well as not letting the food sit out for long periods of time before loading into the truck for an event.

I also observed cooked jalapenos cooling at room temperature on the prep table. The following are effective means to properly cool food: (1) Placing the food in shallow pans, (2) Separating the food into smaller or thinner portions, (3) Using rapid cooling equipment, (4) Stirring the food in a container placed in an ice water bath, (5) Using containers that facilitate heat transfer, (6) Adding ice as an ingredient, or (7) Other effective methods. When food is placed in cooling or cold holding equipment, food containers in which food is being cooled shall be arranged in the equipment to provide maximum heat transfer through the container walls; and loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. The salsa was voluntarily discarded, ice was added to the horchata and cooked peppers relocated to correct the violation.

Place screening on the door to prevent insects or other pests from entering the facility.
