A pot of beef stew was observed in the low reach in cooler in front of the grill without a prep or discard date. The PIC stated that they had prepped the stew today. EHS reminded the PIC that they have 24 hours to date mark all food items that are cooked, cooled, prepped, and opened. PIC dated during the inspection. CDI |

3-304.12 Store in-use utensils in a clean, dry place, in food with handles out, in 135F or greater water or in running water which quickly moves food particles to the drain. Tongs and spoons were observed touching the product in a few containers of slaw and pico during today's inspection. EHS explained that the utensils need to have the handles sticking up and out of the food. The PIC placed the utensils right side up in each container. CDI |

A domestic deep freezer was observed in the kitchen during today's inspection. The PIC stated that they will get rid of the freezer soon.
4-501.11 (B) Good Repair and Proper Adjustment Equipment
Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer’s specifications.
The gasket on the low reach in cooler in front of the grill were observed torn. The PIC stated that they were working on getting new gaskets. Replacing is needed. |
