3-302.11 Packaged and Unpackaged Food - Separation, Packaging, and Segregation (P) In the True 2-door cooler, a flat of raw shell eggs was stored on the shelf beside cut produce items. Eggs were moved to the opposite side with raw animal foods. Also, in the freezer, opened boxes with raw hamburgers and raw Philly steak meat were stored above opened bags of onion rings and chicken tenders. Discussed the storage order, and PIC rearranged the frozen items. Store raw animal foods below ready-to-eat foods, and store opened raw animal foods in the freezer below ready-to-eat foods or under foods that require lower cooking or reheating temperatures. |
