3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24 hours. (Pf) Observed ice cream mix in ice cream machine not date labeled. PIC stated that machine is on a 28 day cycle as per manufacturer. Machine raises to approx. 150F nightly. Ice cream mix shall be date labeled and used within 7 days unless a Variance is applied for and approved. CDI - Education, EHS reaching out to NC DHHS and PIC can reach out to corporate for additional info. |
