3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food, Hot and Cold Holding (P) Some of the foods in the flip top cooler were between 43-45F and the ambient in the bottom was at 43F. After pulling the unit from the wall and waiting 20 minutes, the unit dropped to 36F and foods started dropping to below 41F. The PIC stated that the unit may have been going though a defrost cycle. Keep an eye on this unit and ensure it is able to hold internal food temperatures at 41F or lower.
Time/temperature control for safety foods shall be maintained at 41F or lower. |

4-501.11 Good Repair and Proper Adjustment - Equipment (C) The small maketop cooler under the small hood system does not work and needs to be repaired or removed from the facility.
(A) EQUIPMENT shall be maintained in a state of repair and condition that meets the requirements specified under Parts 4-1 and 4-2.
4-501.12 Cutting Surfaces (C) Resurface or replace large cutting board on the large flip top cooler. It is scratched and stained and unable to properly clean.
Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and SANITIZED, or discarded if they are not capable of being resurfaced.
