General CommentsRaw, bone-in chicken for fried chicken has been added to menu with no approval from this department. Three to four packages/containers of raw, bone-in chicken discarded immediately. Owners state they want to add one 'plate' meal per day, such as spaghetti, chicken pastry, tacos, etc. with no cooling and leftovers to be discarded. They asked if they can bring raw meats from grocery store and cook immediately when they arrive (after handwashing, etc) so that food does not need to be refrigerated. They asked about two meats on the same day - no, because both meats cannot be prepared at the same time without enough refrigeration, one of the meats would need to be at room temperature while the other one is being prepared. This is not approved. EHS requested written request of what foods owners want to add to menu. The new menu shall not begin until approval received from this department. Manager states all foods held hot are discarded at the end of the day. Magnets provided that explain storage in refrigerators from top to bottom, temperature danger zone (TDZ), and cooling times and temperatures. Manager and owner both state no raw meats or raw eggs will be served undercooked.

Keep raw meats adequately separated from each other on shelf. Raw meats shall be stored according to bacterial load/cooking temperature in refrigerator.

Food contact surfaces shall be washed, rinsed, and sanitized. Skipping the rinse step leaves detergent and possibly food particles on the utensil. Detergent and food particles make sanitizer less effective.
