Utensils shall be cleaned throughout the day at least every four hours if used with TCS (time/temperature control for safety) food. I spoke with PIC about switching out peels if lunch runs longer than four hours to correct the violation (MFU only operates for lunch/until the run out of food which is typically less than four hours). 0 PTS |
