Pf *Observed two metal pans with greasy residue at bottom. CDI-Pans were moved to 3 comp to be washed. 4-501.114 - Manual and Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration, and Hardness: Maintain sanitizer at correct concentrations when being used to sanitize. Chlorine sanitizer shall be maintained between 50-200ppm. Quaternary ammonia sanitizer shall be maintained between 200-400ppm. P *Quaternary ammonia sanitizer in buckets was below 200 ppm when tested. CDI-Sanitizer buckets was remade to required concentrations.

Tape needs to be removed to ensure door handle is cleanable.
