General CommentsThe following transitional items have been completed: 3) Repair/replace handsink so that it drains properly. 4) Repair/replace handsink so that it does not leak. The following transitional items remain: 1) Make floor throughout smooth and easily cleanable. 2) Make floor in walk in cooler smooth and easily cleanable. 5) Remove cement blocks and provide approved feet/castors for 3-door reach in freezer. 6) Paint all areas of walls and door thresholds that are not smooth and easily cleanable. 7) Resurface/replace 2 large table top cutting boards. 8) Repair/replace large white and gray display cooler so that it no longer leaks water from the bottom. 9) Facility is permitted without a prep sink. If during the course of the transitional period a prep sink is deemed to be required, one shall be installed. Facility at time of inspection uses the prep sink to wash dishes only. All meats arrive fresh and no thawing is required.

Queso fresco and Oaxaca cheeses were cut and prepped this morning so those items were moved to the walk in cooler to rapidly cool. Cooler air temp at 41F during inspection as PIC had closed the door and cooler was cooling. Cooler display temperature was at 35F.
