3-501.19 Written procedure shall be prepared in advance, maintained at the food establishment, and made available to the regulatory authority. Pf Facility is using Time as a Public Health Control for their noodles and is labeling noodles correctly for a 4 hour time hold but no written procedures were available upon request. CDI- EHS provided copy of TPHC policy for PIC to fill out and keep on hand. |

3-304.14 Store sanitizer containers used for wet wiping clothes off the floor. Maintain sanitizer containers for in-use cloths free of visible debris and soil. Observed sanitizer bucket holding in use wet wiping cloths was stored on the ground. |
