General CommentsElote observed cooling upon arrival with sticker stating item began at 11:54. In discussion with PIC and food employee item had just completed cooking 15-20 minutes prior to EHS arrival. EHS first temperature was at 11:58 and second at 12:13. Through discussion and log (time and date sticker) starting time was determined. Item was required to decrease 36 degrees in 100 minutes. This requires a rate of .36. Item was being cooled in WIC with good airflow, in a metal open pan. It is determined that with these observations and calculation that item would reach 70 within the 100 minutes left. Temperature taken 50 minutes later, item was 67F, moving into second cooling window.
