General CommentsPlease write time as a public health control procedures for the food that you discard within 4 hours (pizza, tomatoes, lettuce, cheese on ice). The procedures have to explain how you mark the food to keep track of time and list the food items kept on time. The fryer in the back room is not approved. Remove from the establishment.
