General CommentsEHS advises procuring additional cold holding equipment. Establishment has reached capacity for amount of food able to be safely held onsite, and storage order compliance can be improved by additional equipment to separate raw and RTE foods. Cold drawers beneath cook line grills, or extra lowboy (for raw meats) is recommended. If violations for storage order cannot be prevented, a permit requirement for more equipment will be added. 180 DAYS TO COMPLETE THE FOLLOWING (08/10/2026): 1. Replace deteriorated green shelving with rubberized coating flaking/peeling off. 2. Replace stained or damaged ceiling tiles in main kitchen. 3. Ensure walk in freezer door is self-closing. 4. Replace warped gasket at walk in cooler. 5. Install proper back-flow prevention device on both can wash faucets- PRIORITY. 6. Remove unsealed wooden wall attachment to right of back hand sink. Replace with a cleanable and non-absorbent fixture, if needed. 7. Do not receive items from commissary in vacuum/reduced oxygen packaging. All items in ROP onsite will require disposal.
