General CommentsThe menu of this establishment noted ceviche cooked with lime; however, the PIC stated that the shrimp ceviche is fully cooked and then lime is added. PIC stated everything on the menu is fully cooked. If the establishment decides to cook their shrimp ceviche with lime, a disclosure statement will need to be added to the menu.
