Per PIC, the soup was made Thursday, April 9th. EHS also observed a container of lettuce for salads in the walk in that did not have a date. The lettuce was date marked since it was prepped this morning. CDI - an employee date marked the soup and lettuce. PIC is going to emphasize to employees that the soups need to be date marked. All other food items were properly date marked. 3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P EHS observed a container of pasta salad in the walk in cooler with the date mark of April 3rd on the lid. CDI - Voluntarily discarded by the PIC.
