3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf
EHS observed a container of chicken and rice soup in the cold hold unit by the front cash register that was not date marked. Per PIC, the soup was made Thursday, April 9th. EHS also observed a container of lettuce for salads in the walk in that did not have a date. The lettuce was date marked since it was prepped this morning. CDI - an employee date marked the soup and lettuce. PIC is going to emphasize to employees that the soups need to be date marked. All other food items were properly date marked.
3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P
EHS observed a container of pasta salad in the walk in cooler with the date mark of April 3rd on the lid. CDI - Voluntarily discarded by the PIC. |
