General CommentsMFU approved to operate as it’s own commissary. The inspection was conducted during dedicated prep time. MFU will not open to public until later this evening. During the inspection, the 3 comp sink was set up as scullery sink and produce washing was not occurring. No food was cooling during inspection and all items were from a previous day and below 41F. Looked at restrooms, mop sink, and potable water hose at servicing facility. Water tank was almost full. Observed a couple things previous cooled that was not discussed at time of permitting (i.e. a few hot dogs). Please provide an updated Cooling SOP which includes a list of menu items and general quantity to Matthew.cook@mecknc.gov.
