3-501.16 Maintain TCS foods in cold holding at 41F or less. P Observed multiple items in large front line prep units were holding above 41 F, including tomatoes at 60 F. PIC stated these items are not held in unit over night and moved before each shift from the walk in cooler to the prep unit. All items were prepped today or were moved from walk in cooler at 11AM. CDI- Some TCS items were placed on time, to be discarded at 3PM, while other TCS items cooled in walk in cooler. |
