19 1.50 Proper reheating procedures for hot holding Yes No No 3-403.11 Reheating for Hot Holding (P) Observed Chili being reheating in the steam table that was at 131F, rechecked after 30 minutes and temperature was at 137F. Staff stated that chili is made in house and was placed in hot holding for an hour. Items made in house that have been cooked and cooled shall be reheated to 165F, shall take no longer then 2 hours to get to 165F. Discussed reheating procedure with staff and had them place chili in a pot on the stove. Chili got to 202F in few minutes and placed on hot holding. CDI

Doors shall be kept closed. If doors are needing to be left open for ventilation, the opening need to be protected from entry of pest, this can been done by adding screens, air curtains or other effective means. Discussed issue with PIC and had employee move his drink to the bottom of the shelf.
