CDI by PIC voluntarily discarding the product, washing hands and putting on gloves.

P During inspection a few lemons were observed in a box of unwashed lemons in dry storage. CDI by having employees remove all of the spoiled lemons and rewashing rest of stock.
16 1.50 Food-contact surfaces: cleaned & sanitized No No No 4-601.11(A) - Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils: Equipment food contact surfaces and utensils shall be clean to sight and touch. Pf During inspection the soda fountain nozzles were found with small amount of mold/soiled build up inside the nozzle cores. CDI by having the nozzles moved to the dish pit to be washed rinsed and sanitized. Additionally several thermometers were found stored as clean with soiled probes. PIC states that most of the thermometers found in this state were not in regular use. CDI by PIC voluntarily discarding some of the thermometers and the rest were cleaned and sanitized.
19 1.50 Proper reheating procedures for hot holding Yes No No 3-403.11 - Reheated for Hot Holding: Reheat all TCS foods to 165F within 2 hours if food is to be hot held until service. P During inspection 1 pan of tomato sauce and 1 pan of marinara and meat balls were found holding at 75-90F on the steam well. Upon questioning PIC stated that they had not been fully reheated to 165F as all product was reheated in pans prior to being served. All product reheated for hot holding must be initially reheated to 165F or greater. CDI by PIC moving all items to the stove top/ oven to be reheated.

Pf (Repeat-Greatly improved from previous inspection) During inspection a few items in the prep cooler and 1 container of mozzarella cheese in the 2 door reach in cooler were found with no date marking. CDI by having PIC relabel all items with the prep date.

During inspection a few( 2-3) flies were observed in the kitchen. Per the PIC they do not usually have this problem however they had a delivery earlier today which may have caused the issue. Cont. working with your pest control group to have all pests removed from the premises.
48 0.50 Warewashing facilities: installed, maintained & used; test strips No No Yes 4-302.13(B) - Temperature Measuring Devices, Manual Warewashing: In hot water mechanical WAREWASHING operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the UTENSIL surface temperature. During inspection the irreversible thermometer in use for the high temp dishwasher was found with the max temp function ( function that makes irreversible) not working. This thermometer must be repaired or replaced by 6/20/26 and a verification visit will be made to ensure correction.
54 0 Garbage & refuse properly disposed; facilities maintained No No No 5-501.114 - Using Drain Plugs: Drains in receptacles and waste handling units for refuse, recyclables, and returnables shall have drain plugs in place. The drain plug for the dumpster is missing and needs to be replaced.
