3-501.14(B) buffalo chicken was originally cooling in the walk in cooler, cooling at a rate of 0.02/min. The chicken was prepared around 9:00 am, the day of the inspection. Time/temperature control for safety food shall be cooled within 4 hours to 41F or less of prepared from ingredients at ambient temperature. PIC moved the food product into the walk in freezer. The cooling rate then was .57/min. |
