3-202.11 Temperature (P) (Pf)-TCS foods shall be received at 41F or less. Tofu packages obtained from grocery per PIC was transported in cooler and measured 48-49F upon receipt in kitchen. CDI by moving these to refrigeration with amb. air 33F to cool to 41F. Use ice in cooler for any TCS foods including tofu. |
